The Blueberry Crumb Party Cake from Rose's The Baking Bible is a crowd-pleasing cake to bake for every occasion, from birthdays to holidays, children to adult, friendly get together to official gatherings. It has everything you need for a perfect cake.
Instead of baking them in a 13 x 9" pan, I baked this cake in a 8" and 9" round pan to cater for 2 parties - one for a family getogether and another for a good friend's birthday celebration tomorrow.
PREPARATION
CRUMB FILLING AND TOPPING - pulsed together in food processor.
BATTER - Mix batter together by whisking eggs, 1/4 portion sour cream and vanilla until lightly combined. Then mix the dry ingredients together, add in the remaining sour cream and butter till moistened. Add in the egg mixture.
Spread one layer of batter, sprinkle on the crumb topping, and drop the remaining batter in large blob.
FIRST BAKING: 40 mins, then topped with crumb filling and topping
SECOND BAKING: 20 mins

APPEARANCE: The cake has a very attractive outlook - mix of blueberry and crumble on top, bursting of some blueberries down to the stunning yellow cake layers and the crumble in between the layers make this cake looks even more interesting.
TEXTURE: The texture is so soft, tender and moist inside.
FLAVOUR: This cake has a very satisfying taste. It combines together a mellow taste from the butter cakes, the crunch and nutty flavour of the walnut crumb and the refreshing blueberries taste.
STRUCTURE: With the help of cake strip, there is no peak in the middle of this cake.

ReplyDeleteIt should be almost the same height? I worked out the area of 13x9 is somewhat equivalent to area of 2 circles (3.142 x 4 x 4 and 3.142 x 4.5 x 4.5)
